curry #1

I would love to make really, really yummy curry.  This way, I won't have to order from my favorite Thai restaurant once a week in the winter.  However, I would like an easy recipe, too.

This is my first attempt (since deciding to take on this project) at making yummy curry.

Tomato Basil Curry Sauce

ingredients:
  • 1 tablespoon vegetable oil
  • 1 tablespoon red curry paste
  • 1 medium tomato, diced
  • 1/4 cup chopped fresh basil
  • 1 - 13.5 oz can coconut milk
directions:
  1. In saucepan, heat oil over medium high heat
  2. Saute red curry paste in oil for 1 minutes
  3. Add tomato and saute for 3 minutes.
  4. Add coconut milk and simmer for 5 minutes.  Stir in basil and serve.

E and I tried this recipe last night.  I added shrimp, green and red peppers, bamboo shoots, broccoli and mushrooms during step 3.  Typically, I like tofu and green beans, too, but there wasn't any tofu in the fridge and I forgot the green beans.

Overall impression, the dish was bland.

So E spiced up the dish with more red curry paste, more curry spice and possibly cumin.  I added pepper and fish oil to my part of the dish.  It was a little better, but not the yummy, yummy curry that I order at Thai restaurants. 

*Next time, I'll remember to take a picture of the dish!!
